Zucchini Cakes

3 Zucchini
1 cup almond flour
3 eggs
salt and pepper to taste
oil of your choice

1. Grate zucchini. Choose a medium grate... too large and they won't hold together as well... too small and you miss out on the texture.
2. Combine zucchini, almond flour, eggs, and seasoning. Mix well.
3. Form into ~ 12 patties.
4. Cook in oil roughly 7-10 minutes per side until golden.

In the past I usually make these with parmesan cheese thrown in the mix, but with our dairy free month well under way, I left it out. I must say, it is good either way. The cheese free version can take on a myriad of flavors... Dip it in salsa for a tex-mex night or try a mustard/mayo mix for grilling out.

  2. Made these today for an afternoon cocktail party with some of my CrossFit girls and they were a big hit! I added an extra 1/4 cup of almond flour as I felt they were a bit wet and it did the trick. Was a little pressed for time so instead of making patties I spooned dollops into the frying pan. They were so good and my friend Taylor left asking me to email her the recipe. Thanks April! Please keep the recipes coming, they are always a hit!

  4. Gave these a second try tonight and they were even better than the first time! Joey had a great suggestion, he wrapped the shredded zucchini in a paper towel and squeezed all the excess water out. This took care of the issue I had with the mix being a bit wet the previous time and they were phenomenal. Thinking about throwing some crab in the mix the next go around... Thanks again!

  5. I'm going to have to try it with crab! That sounds super delicious! Great idea about removing some of the moisture. I've don't that in the past but for some reason I don't have problems getting these to hold together. I do know that if you let the 'batter' sit it gets watery. I tend to work quickly from the time I mix them to getting them in the pan. Who knows, maybe your zucchini are just different than mine! :)
