I've don't that in the past but for some reason I don't have problems getting these to hold together. I do know that if you let the 'batter' sit it gets watery. I tend to work quickly from the time I mix them to getting them in the pan. Joey had a great suggestion, he wrapped the shredded zucchini in a paper towel and squeezed all the excess water out. This took care of the issue I had with the mix being a bit wet the previous time and they were phenomenal. Thinking about throwing some crab in the mix the next go around... I added an extra 1/4 cup of almond flour as I felt they were a bit wet and it did the trick. Was a little pressed for time so instead of making patties I spooned dollops into the frying pan. They were so good and my friend Taylor left asking me to email her the recipe. Thanks April!
