1/3 c olive oil
1/2 tsp salt
1 tsp red pepper flakes
3 tsp minced garlic
Toss all ingredients into a large bowl. Marinade all day (optional). Put into a roasting pan and roast at 375 for 45 minutes. Stir 2-3 times while cooking to ensure even browning.
This looks simple and delicious April! I can't wait to give it a try. Just made this eggplant dish from Elana's pantry last week and it was really easy, quite yummy, and 100% paleo! http://www.elanaspantry.com/eggplant-caponata/
ReplyDeleteroxan,

Great site here, some of my clients have been following it, and yes they call me joey posterboy warren. Roxan is one of my postergirl clients in the gym. I train her hard in the gym and then she makes these recipes and passes them along to me. Good little trade off. Keep them coming, we are loving them! And Unit we def will have to train together sometime, hopefully in Aromas!
ReplyDeleteApril, made the cauliflower and it was delicious! It has a great, almost nutty flavor. Only was able to marinade for an hour, but good nonetheless.
ReplyDeleteUnit, yes, that would be him. :) He is an AMAZING trainer and an even better friend. I have been training with Joey for over a year now and he has changed my life for the better in so many ways! Funny how this world of CrossFit is so small. Come visit our gym in Cali whenever you would like! You too April! :)
Thanks everyone!
ReplyDeleteHopefully we will all meet eventually... and it would be amazing if it were at Aromas.
I modified it by adding curry powder instead of the garlic. Very, very tasty and super easy!
ReplyDeleteHey, this is Joey's girlfriend and Roxan's friend! Keep up the blog! We love new paleo ideas! Taylor
